Chocolate Cornflake Easter Nests

This recipe is a bit of a throwback, and one of our favourite parts of Easter – chocolate cornflake nests, complete with chocolate mini eggs.  These have been a staple part of our household Easter celebrations, and I also remember having these at school.  Quick to make and memorable, why not give them a try over the Easter holidays!

 

Chocolate Cornflake Nests

 

Ingredients:

 

  • 225g Milk Chocolate (broken into pieces)
  • 100g bag of Mini Eggs
  • 2 tbsp Golden Syrup
  • 50g Butter
  • 75g Cornflakes (or other cereal like Rice Krispies or Shredded Wheat if you fancy experimenting!)

 

Don’t forget:

 

  • Fairy cake paper cases
  • 12 hole fairy cake tin
  • Space in the fridge for them to set!

Instructions:

 

Line a the fairy cake tin with paper cases.  Melt the chocolate, butter and golden syrup together in a bowl, balanced on a pan of gently simmering water (make sure the bowl doesn’t touch the bottom of the pan!).

Mix them together thoroughly, and then carefully remove the bowl from the water and gently stir in the cornflakes, coating them all over.

Spoon the mixture equally into the cases, then pop a few eggs on the top of each for decoration (we also used the picks that come with these Easter cupcake cases!).  Pop the tray in the fridge, and leave for an hour to set.

Once the nests have set, take the tray out of the fridge, put the nests on a serving plate and enjoy as part of your Easter celebrations!
